It is the first Bio Icewine of the world It is a wine produced from ripe grapes, of Portuguese origin. The grapes are frozen at -7°C prior to fermentation, the water inside the berries freezes and the ice is separated from the sugar-rich juice. The sugars and other dissolved solids do not freeze, but the water, in addition to allowing a more concentrated grape, has to be pressed from the frozen grapes, resulting in a smaller amount of more concentrated, very sweet wine. The own weight makes the maceration and fermentation that takes about 60 days in isothermal vats with controlled temperatures. The icewine is considered by many a winemaking masterpiece. A nectar whose yield is so low. The Icewine D'Freixo Wine is produced with multi-cascades of the Douro, Malvasia Fina Branca, Viosinho, Gouveio Branco or Verdelho. In the mouth the initial attack is fresh refreshing, but by virtue of the high acidity the wine is balanced is called the wine of the Gods or Goddesses.
