VINIFICATION AND STAGE
48-hour pre-fermentative maceration with controlled temperature. Separate harvesting of each caste, destemming, crushing, alcoholic fermentation with controlled temperatures in small mills at 25°C, with blanket submersion. Delastage and reassembly with aeration. Post-fermentative maceration with temperature control. Malolactic fermentation in French oak bellies.
