Grapes harvested by machine at the ripening peak, in early September 2013. Quickly transported, under inert atmosphere, to our winery to be processed with all it´s potential in aroma and flavour. The clusters were destemed and crushed before entering the steel-tanks. Skin "coldsoak" for 24 hours, fermentation with controlled temperature (26ºC) with short maceration.
