Year of harvest: Dry year with an annual rainfall well below average, low production induced but with grapes of high quality and concentration.
Viticulture: Environmentally sustainable farming practices in vineyards older than 25 years, southoriented in calcareous soils with good drainage.
Winemaking: Total destemming without crushing. Fermentation takes place in underground concrete tanks, followed by pre-aging also in concrete tanks, at low and without temperature fluctuations before aging in oak barrels for six months.
