This sparkling wine is produced from the musts of the Alvarinho and Trajadura grape varieties. Fermentation and long aging in bottle (36 months), complete the process that brings together the maximum expression of the two grape varieties, resulting in an elegant, fresh, vibrant and very gastronomic sparkling wine.
Grape Varieties: Alvarinho and Trajadura.
Vinification: The previously selected grapes and exclusively transported in 20 kg boxes are pressed whole to obtain a high quality must. The must is clarified at 12 ° C for 48 hours and fermented at a controlled temperature for 12-15 days. This is followed by a 5-month internship on fine lees. Subsequently, bottling, fermentation (classic method) and a 36-month stage are carried out, after which remoage and degorgement are carried out.
Wine Pairing: Excellent to accompany with fruits of the sea, grilled meats and baked in the oven.
