Philosophy: A SYRAH wine, different from the usual profile, expressing the local terroir.
Harvest: Dry year with an annual rainfall well below average, but with grapes of high quality and concentration.
Viniculture: Environmentally sustainable farming practices in vineyards older than 25 years, south oriented in calcareous soils with good drainage.
Winemaking: Total destemming without crushing. Fermentation takes place in underground concrete tanks, followed by pre-aging also in these tanks, at low and with no temperature fluctuations before aging in oak barrels for six months.
